Taste the Rainbow… Jello!

For quite some time I’ve had THE rainbow cake on my “to bake” list, but so far I haven’t found the time or right excuse to make it.  But after the ridiculously weird and rainy weather recently, I just needed to make something fun and colorful.  So I headed to the store, and bought six boxes of jello and some cool whip, and made rainbow jello!  This is a bit of an all day project, but in general is quite easy and produces an eye catching dessert!  Obviously, the same general concept could be use with other color combinations… red, white and blue, school colors, team colors, you name it!  If you want to do red “white” and blue, since there is no white jello, use lemon jello mixed with cool whip as the “white” layer, as I did HERE)

~ How to make rainbow jello ~

You’ll need one small box of jello for each color you want… so in this case, red, orange, yellow, green, blue, and purple. And one large tub of cool whip.

Prepare purple (or whatever color you want on the bottom) jello as directed, using the “quick chill” method, meaning add some ice.  Pour jello into glasses, (or a 9’x13′ baking dish sprayed lightly with cooking spray), reserving about 1/3 of the liquid jello.  Put glasses, or dish in the refrigerator and chill for 15-30 minutes, or until slightly set.  Mix about 1/3 cup of cool whip into the remaining purple jello.  Pour the jello/cool whip mixture on top of the slightly set purple jello already in the glasses (or dish).

Repeat process for each color.

I’ve seen recipes that use sour cream, or yogurt in place of the cool whip, so feel free to do that if it saves you a trip to the store  =)

Once set, top with some additional cool whip and sprinkles if desired.

  16. turned out beautifully! It actually would save a bit of time to use cool whip over the sour cream (that is the method I do). There is something about the taste of the sour cream layer that the kids really love. I'll have to try it this way and see what they think. Oh and for sure I will be making it in individual glasses next time as well. Much more of an eye candy that way!

Just to add another variation, my grandmother made this for us and would make up each layer of jello using the 1 cup of boiling water, but instead of using the ice/cold water, she would use 1 cup of ice cream. Then in between each layer she would use a very small amount of sweetened sour cream. She made it in an extra large (10×15?) pyrex baking pan which made each layer very thin. I love the idea of the individual glasses! This treat is a family favorite and worth the extra effort it takes!

  46. Kayteedids- Each layer should be at least slighly firm and settled before adding the next layer. It sound like you just need to let the cool whip layer firm up more before adding the next colored layer.

  49. Love it love it love it! I about had a cow (looking @ price tag) when my hubby had a similar dessert at a local grocery store deli. I wanted to re-create it at home, but I think yours beats mine by about a mile, so thank you very much for the picture and explanation.   51. This is a favorite tradition at our Thanksgiving (and any family get-together really) every year. Instead of mixing the jello with cool whip we use mayonnaise. Sounds nasty, but tastes so yummy!!

  52. I've been making rainbow jello for special occasions and holidays for almost 20 years, having seen the recipe originally in a Susan Branch cookbook. Now my kids, 19 and 22, don't think it's a holiday without it. Of course, I change up the color combo depending on the occasion – Christmas was of course red and green. Yours, in the ultra thin layers in a glass, are beautiful!

  53. Hi glory, I live in new zealand and in saying this I'm not sure what cool whip is. Is it cream in a can ? I love your blog and find new things all the time. My daughter is having a candy party after I saw your one I fell in love with it. We too will be having pink and green as a theme as my daughters favorite colour is green and we have to have pink. I must say Im finding it hard to find things over here though and was just wondering if you had food other than the candy cookies and pin wheel sammys.     The glasses shown are about 12 oz glasses I bought at a discount shop a while back. This dessert could be made in most any size glass or plastic cups.

  64. After you put the coolwhip layer down, so you have to put it back in the fridge for another 15 min, or can you go on to the next step right away?

    • Yes, between each layer (including the cool whip layer), it needs to be chilled to set up. It does take quite a bit of time to make this… but the results are so fun!

  68. Hi, I am going to do this for my daughter’s birthday.. just wondering how many cups this makes? I saw that you used 12 ounce cups, but am trying to figure out if I need to double or triple the recipe. Thanks!!

    • Yvette, Take a look at the jello boxes and see how much water is need for the “quick chill” method. Take that amount and multiply by the number of colors (in this case 6). This will give you a base to work off of. The Cool whip will add some additional volume, but I think just figuring out how many ounces of jello will give you a good idea. Then figure out how many ounces the cups you plan to use will hold, and you’ll know how many batches to make.

    • I think it would be fine to make them a few days in advance. Just make sure you don’t have any strong odors in your fridge that may make their way into the jello.

    • I’m not sure what you mean? What size dish/dishes are you using? Do you not have enough cool whip layer to fill the glasses or cups you already put a layer of jello in? The cool whip/jello layer will be thinner than the plain jello layer.

  82. I do a similar thing with Jello EVERY year for Thanksgiving. Started it when my kids were young, and it’s become a tradition. I spray the inside of a bundt pan with cooking spray (or you can coat it with a thin layer of mayo) so the jello will come out easily when finished.
    I do two layers for each color, the first of which is just a box of jello with 1 cup hot water. Chill in fridge for at least 30 min. After about 20 min., mix the second layer up, so it can cool slightly before pouring onto the previous layer. In the second layer, I mix in 2 Tbsp. of cream cheese with a whisk, Repeat with each color, just remember to do it in the order that you want from top to bottom(since you’re going to invert the pan when finished) So, 2 of each, red, orange, yellow, green, blue, and purple. I have to do this on Wed. before Thanksgiving, and leave it overnight in the fridge. Thanksgiving morning, I run a warm wet rag over the bottom of the pan, then invert it onto a pretty plate! What comes out is the most beautiful rainbow ring you’ve ever seen! And when you slice it, the kids will eat every bite!! The cream cheese really gives the Jello a great flavor, too!

  106. My family requests rainbow Jell-O for special occasions. We love it! I layer mine in a 9 x 13 pan but love the idea of making it fancier with goblets.

  107. !I made this using a 9X13 glass dish and it turned out fine. I spooned the additional layers instead of pouring so they would be smooth and the tip to make sure they are set is important. I used 45 min in the fridge instead of 30 and also make sure the pan is set level or they won’t be ! I put the left overs in the fridge at an angle and they all slid in one corner. Still tasty, though. I will making this for family for Easter.

  127. Hello, thank you for a great recipe! I am attempting to make it now and am running into a problem. When I pour the next color of Jello in, the Cool Whip floats to the top and is making it look somewhat sloppy. Is there anyway I can get the Cool Whip to not float up? Thank you.
