This easy Berry Cobbler recipe is made with juicy mixed berries and topped with a buttery, golden topping made with cake mix. It's the perfect dessert for any occasion, from casual weeknight dinners to special gatherings. Don't forget the scoop of vanilla ice cream or fresh whipped cream!

- 32 ounces frozen mixed berries strawberries, blueberries, blackberries, etc.
- 13 ounces vanilla cake mix divided (I used French Vanilla)
- ¼ cup brown sugar light or dark brown
- 1 tablespoon cornstarch
- ⅔ cup whole milk
- 8 tablespoons salted butter melted

Preheat the oven to 350°F. Lightly grease a 9x13 inch baking dish with nonstick baking spray. Set aside.
In a large bowl, toss together the frozen berries, ½ cup vanilla cake mix, brown sugar and cornstarch until evenly combined.

Transfer the mixture to the prepared baking dish and spread in an even layer.
Combine the remaining vanilla cake mix, milk and melted butter in a bowl (just use the same one the fruit was in) and whisk just until combined.

Drop or pour the batter over the berries and use an offset spatula to spread as evenly as possible. Don't worry too much about any gaps or lumps.
Bake the cobbler for 45 to 55 minutes or until filling is bubbling and the top is golden brown. An inserted toothpick should come out clean or with a few moist crumbs. If the cobbler is not baked and the topping is getting too dark, tent with foil and continue baking until done.
Remove from the oven and let the cobbler cool for 5 minutes. Serve warm with whipped cream or vanilla ice cream.
