Add chocolate sandwich cookies to a large ziplock type bag and crush (with a rolling pin) until crumbs.
Add crumbs into a large bowl with flour. Add baking powder and salt and set aside.
Blend cold butter until smooth. Add sugar, egg, and vanilla until fully incorporated.
Add the flour/crumb mixture and blend until all ingredients are combined.
In the bowl of an electric mixer, beat butter until smooth. Add cream cheese and continue to blend until smooth.
Add powdered sugar, salt, and vanilla and continue to blend
Add another cup of sugar and mix until smooth and fluffy. Add food coloring as desired.
Spread frosting onto fully cooled cookies.
