Chocolate S’mores Cupcakes
These easy S'mores cupcakes are made with delicious chocolate cupcakes with light and fluffy marshmallow frosting and topped with graham crackers and chocolate.
Make the chocolate cupcakes.
In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla. Beat on medium speed for one minute.
Fill liners 2/3 full with batter. And bake the cupcakes.
Prepare the frosting.
In a large heatproof bowl, combine the egg whites, sugar, water, corn syrup, cream of tartar, and salt.
Set the bowl over simmering water in a saucepan and heat the mixture. Stir until the sugar has dissolved.
Remove the bowl
from the saucepan. Using an electric mixer, beat on medium-high speed.
Add the marshmallows to the electric mixer, and add vanilla. Continue beating until the marshmallows melt and the frosting is completely smooth.
