Ingredients

  • 2 cups all purpose flour spooned and leveled
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups mashed bananas 3 to 4 ripe bananas, mashed
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs room temperature
  • 6 tablespoons unsalted butter melted and cooled
  • cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F.
  • Spray an 8½ x 4½ inch loaf pan with nonstick cooking spray or grease and flour the bottom and sides. Set aside.
  • In a medium bowl, whisk together the all purpose flour, baking soda and salt.
  • Mash bananas in a separate large bowl using a potato masher, fork, or a mixer. Whisk in granulated sugar, brown sugar, eggs, melted and cooled butter, sour cream and vanilla extract.
  • Add flour mixture to wet ingredients and stir in gently to combine. Spread evenly in prepared loaf pan.
  • Bake the bread for 50 to 60 minutes or until an inserted toothpick comes out clean or with a few moist crumbs. If you notice the bread starting to get too brown on top, simply tent with foil.
  • Let the bread cool on a cooling rack in the loaf pan for 15 minutes.Carefully remove banana bread and place directly on the cooling rack to finish cooling.
